It’s a rainy Spring September day in Sydney and I whipped this soup up as a friend was feeling sick. It’s so easy to cook and extremely delicious. This soup is nutrient dense and full of whole foods. It makes about 4-6 bowls.

Ingredients:

Cold pressed extra virgin olive oil (or organic butter)

1 leek finely chopped

2-3 cloves crushed garlic

1 stock cube or stock

Salt and black pepper to taste

1 carrot

A few celery sticks

1 large sweet potato

1 zucchini

3 organic chicken drumsticks

4-5 springs of fresh thyme

METHOD

Dice all your Veges- carrot, celery, seed potato and zucchini.

Gently heat the oil in a large pot

Add the leek for a couple of minutes, then add the garlic for 1-2 mins

Stir in carrot and celery for a few minutes

Turn up the heat and add stock, sprigs of thyme, salt, pepper, sweet potato, zucchini, entire chicken drumsticks and cover with water

Bring to the boil then simmer for about 40 minutes (when the chicken meat falls of the bone it’s ready). Remove bones, chicken skin and the thyme sprigs.

Serve with extra fresh thyme on top and perhaps a splash of olive oil or fresh parsley.

BENEFITS

Thyme is anti-bacterial and thought to help alleviate sore throats and coughs. If I’m feeling sick, I’ll put a fresh spring or two in a mug and add boiling water ie Fresh thyme tea. I find it pretty tasty and comforting as I know it’s good for me during that time.
