Slow cooking is so easy, delicious and nourishing.

This recipe can be vegan or with added bone broth. It’s high in complete protein, iron, vitamin B and calcium.

This dish takes about ten mins too prep and make 6-8 serves.

Add everything to slow cooker, if necessary add some extra water to just cover ingredients.

Slow cook for 4-8 hours!




Ingredients:

  • 3 cups diced sweet potato about 1 large

  • 1 cup diced red onion about 1 medium

  • 1 cup diced red capsicum about 1 large

  • 3 garlic cloves crushed

  • 1 can organic black beans

  • 1 can organic diced tomatoes

  • 1 stock cube + 2 cups water or 2 cups of bone broth

  • 2 Tbs tomato paste

  • 1/2 cup uncooked quinoa

Spices:

  • 1-2 tsp chilli powder more or less to taste

  • 1-2 tsp cumin powder

  • A few cumin seeds

  • 2 tsp paprika

  • 1 tsp coriander powder

  • 7ish coriander seeds

  • 1/2 teaspoon cayenne powder more or less to taste

  • Salt and pepper to taste

Serve with fresh coriander, guac or smashed avo, fresh lime and with or without cheeky tortilla chips!

Sweet potato has a cooling thermal nature, is high in vitamin E, strengthens the spleen and pancreas (which is paramount for energy and good digestion according to Chinese medicine), promotes energy, increases quality of milk in lactating women.

Quinoa (pronounced Keen-wa) has a warming thermal nature and strengthens the whole body. It has a very high protein content, more calcium than milk and is a good source of vitamin B, E and iron.

Black beans have a warming thermal nature, are high in protein, calcium, iron and B vitamins. They are beneficial to the kidneys and reproductive function. According to Chinese medicine they are good for knee pain, lower back ache and infertility.

Tomatoes have a cooling thermal nature, sweet and sour flavour. Build yin, purifies blood, cleans the liver and encourages digestion.

Garlic and onion are very pungent, move energy in the body, helps inhibit the common cold and both promote healthy intestinal flora (microbiome).
